fender welting was used between the fender and armor. i used 1 1/2" wide X 3/16" bead on mine and it looks great. the original may have been 1/4" bead but none of the welting survived on my halftracks. if you search for "fender welting" on ebay you will find it cheap.

here are some pics of the original canvas type. its smooth on the outside just like the vinyl. i don't think you can tell the difference once installed. the original is 1 1/2" with a 3/16" bead.

My question is do the majority of owners even use anything between fender and body? What was the idea behind it? I ask because im almost at the point of putting fenders on

you should use it but i would not recommend the canvas type.
the canvas holds moisture.

At one point the fender welting was discontinued use by all three manufactures. I one of my manuals it has a section on when certain things were started and/or discontinued. the Fender welting and heaters are just two of the things I remember that were discontinued.
